Menu Plan Monday: December 24-30, 2007

Comments on last week’s menu: No major changes, except I did juggle the days around a little. The Garlic Lime Chicken was a hit with my guests, but I found it a little too intense, flavor-wise, and the kids didn’t care for it at all.
This week is bound to be a little chaotic, so I have a tentative menu:
Monday — Early dinner before church service. We’ll have Imperial Chicken Bake with a salad and skillet potatoes
Tuesday — no plan. We’re having a big meal at my mother-in-law’s house around 1:00.
Wednesday — Awesome Baked Pork Chops; pierogies, mixed veggies
Thursday — Baked Chicken Breasts with Lemon & Parmesan; chicken & herb rice, broccoli
Friday — Family movie night; finger foods (pizza bagels, popcorn chicken, and the like). Movie TBD.
Saturday — we’re leaving for a trip to visit some friends. No cooking at home for me.
Sunday — No cooking at home again today.

i love the idea of a family movie night, finger food is the way to go, so much easier. Do you have a specific recipe for the popcorn chicken? i’d love to give it a go if you do.
