Recipe Share: So Good Corn Chip Pie

from Paula Deen Magazine’s “Comfort Food” issue


2 lbs ground chuck

1 large sweet onion, finely chopped

2 (15 oz) cans tomato sauce

1 (15 oz) can chili beans

2 Tbsp chili powder

1/2 tsp garlic powder

1/2 tsp ground chipotle chile pepper

1/2 tsp salt

1/2 tsp ground black pepper

corn chips (aka Fritos)

toppings:  shredded cheddar cheese, sour cream



In a medium Dutch over, combine ground chuck and onion; cook over medium heat for 8 to 10 minutes or until beef is browned and crumbly.  Drain well; return to pan.

Add tomato sauce, beans, chili powder, garlic powder, , chile pepper, salt, and black pepper.  Bring to a boil over medium heat; reduce heat and simmer for 15 minutes.

Spoon chili mixture over chips.  Serve with desired toppings.
