Menu Plan Monday: February 6-12, 2012

Comments on last week’s menu: The Sausage & Pepperoni Baked Spaghetti was a huge hit with everyone.  Highly recommend it, but halve it if you have an average family of four and don’t want leftovers for a week or more.  I posted the recipe here.  As for the rest of my week, I really underestimated how stressful (and messy) getting replacement windows installed was going to be.  After two full days of hearing hammers banging and my neurotic dog barking, I couldn’t have cared less about cooking dinner.  So last week we went out a few times instead of sticking with the menu plan.  We’ll carry those items over to this week.

Monday — Girl Scouts for us girls, and the boys are serving dinner at the homeless shelter.

Tuesday — Trying a new recipe:  Baked Chicken and Pineapple Casserole.  No link for it, unfortunately, but I will post recipe if it turns out well.

WednesdayJagerschnitzel with Bacon Mushroom Gravy, served with potato dumplings and mixed veggies.

Thursday — spaghetti, Caesar salad, garlic bread

Friday — make your own pizzas, carried over from last week.

Saturday — I’ll be out selling Girl Scout cookies from noon until 4:00 pm.  Pretty safe bet that I will not be interested in cooking a big meal, so I’m planning on Grands Ham & Cheese melts.  With soup, if I’m feeling inspired.  LOL

Sunday — leftovers or snacking.
