Menu Plan Monday: November 7 – 13, 2011November 6, 2011
I forgot to post last week’s menu plan! Thankfully, there was only one dish on the menu that didn’t get fixed. Here’s what’s cooking this week:
Monday — Girl Scout meeting night. Sophia and I will either have leftovers or fast food.
Tuesday — Chicken Enchiladas (recipe from a Paula Deen magazine; you can find it here) served with southwestern salad.
Wednesday — It is ridiculous how many weeks I have had this on the menu for Wednesday night and never made it. Once again, I am planning to fix Grands Ham & Cheese Melts.
Thursday — White Calzones, served with Caesar salad.
Friday — Chicken Spaghetti.
Saturday — I will be at a women’s conference until 3:00, so I think setting up the crock pot will be the best way to go. I’ll be trying a new recipe — Slow Cooker Pork Chops with Apple Chutney. Sides will be rice pilaf and mixed veggies.
Sunday — leftovers or snacking.
Also, at some point this week I am going to try to make sweet potato biscuits. Mmmmm! I found a Paula Deen recipe for them in the most recent issue of Food Network Magazine. When I looked for it online so I could link to it, there were two different Paula Deen sweet potato biscuit recipes… and they were different from each other! They were also different from the one I got in the magazine. If they turn out well, I will post the recipe here, but in the mean time, if you’re interested here is link #1 and here is link #2.
