Menu Plan Monday: May 2-8, 2011May 3, 2011
Comments on last week’s menu: The Cheesy Biscuit Bean ‘n Beef Casserole was quite good, but the biscuits on the top did not cook well and ended up very gooey on the bottom. That kind of grossed me out. If I make it again, I may cut the biscuits into thinner pieces so they will cook more thoroughly. On to this week, which features a few carry-overs that didn’t get cooked last week.
Monday — Sophia and I will grab a quick meal on the go before heading to a Girl Scout activity.
Tuesday — Crab cakes, french fries, and mixed veggies.
Wednesday — ham, pierogies and peas before we go to cell group. Tres Leches Cake for cell group dessert.
Thursday — Cinco de Mayo! I’ll fix tacos. and have a southwestern salad to go with.
Friday — I’ll fix a Tater Taco Casserole that we put in the freezer the last time I made it.
Saturday — Pork Roast with Mashed Potatoes and Gravy and mixed veggies.
Sunday — Mother’s Day dinner out for me, my mom, and my MIL!
