Comments on some new recipes I’ve recently tried: The Baked Ziti was quite good. I’m not a big fan of meatless pasta dishes, but this had great flavor and texture. I also tried a Bacon-Swiss Burger Casserole and it was just okay. Something about the flavor was a little off. Trevor complained that it tasted “sweet,” so I’m thinking it may have been the ketchup in it. I didn’t like it enough to fiddle with the recipe and try to improve it. I also tried Grands Ham & Cheese Melts, which were a nice change from your run of the mill grilled sandwich. Sophia absolutely loved them and asked for the extras to be packed in her lunch.
As for this week…
Monday — Best Tuna Casserole, modified to include extra tuna fish
Tuesday — Ravioli and Italian sausage, served with Caesar salad.
Wednesday — A quick dinner out before we head to cell group.
Thursday — Crab cakes, peas, and baked potatoes
Friday — Barbecue Chicken Wraps (minus the coleslaw because that’s gross!), served with mixed veggies.
Saturday — We have tickets to a fundraiser spaghetti dinner. No cooking for me!
Sunday — leftovers or snacking.
