Menu Plan Monday: January 10-16, 2011January 10, 2011
Comments on last week’s menu: The Walk Away Baked Spaghetti was good, although there wasn’t anything special about it that made it stand out from other baked spaghetti recipes I’ve tried. It was quick and easy to make, though, so that’s a benefit. On to this week:
Monday — Girl Scout meeting. I’ll be picking up pizzas for the girls.
Tuesday — Celebrating my mother-in-law’s birthday and having her over for dinner. I’ll fix Chicken Chesapeake served with rice and broccoli.
Wednesday — busy cell group evening. We’ll have chicken sandwiches, mac & cheese, and baked beans.
Thursday — I am making Baked Ziti for us and a couple from church. Serving both with Caesar salad and garlic bread.
Friday — Moms’ Night Out! Dan and the kids are on their own for dinner.
Saturday — Trying a new recipe: Bacon-Swiss Burger Casserole. (Recipe below.) Serving with salad.
Sunday — leftovers or snacking.

BACON-SWISS BURGER CASSEROLE (8-10 servings)
2 pounds ground chuck
1 cup chopped onion
1 (14.5 oz) can petite diced tomatoes, drained
1 cup ketchup
1/2 cup mayonnaise
1 Tablespoon Dijon mustard
1.5 teaspoons salt
2 cups shredded Swiss cheese
2 cups shredded sharp Cheddar cheese
1 lb penne pasta, cooked and kept warm
1 cup Panko bread crumbs
10 slices bacon, cooked and crumbled
- Preheat oven to 350 degrees. Spray a 13 x 9 inch baking dish with non-stick cooking spray.
- In a large skillet, combine ground chuck and chopped onion; cook over medium heat until beef is browned and crumbly. Drain well. Add diced tomatoes, ketchup, mayonnaise, mustard, and salt, stirring until combined. Stir in Swiss and Cheddar cheeses. Add penne pasta, stirring to combine.
- Spoon mixture into prepared baking dish. Sprinkle with panko and bacon.
- Bake for 20 to 30 minutes or until heated through.
