Menu Plan Monday: January 3-9, 2011January 3, 2011
Comments on last week’s menu: Well, I still haven’t made my deliciously decadent Raspberry Jubilee French Toast. Maybe this weekend… if I can remember to do it the night before! The new recipe from last week was the Turkey and Mashed Potato Croquettes and I have to say, they were DELICIOUS — absolutely the best leftovers I’ve ever had. The crispy outside, the mushy potato/turkey inside, warm gravy on top… YUM!! Highly recommend this recipe!
Monday — Walk Away Baked Spaghetti with a salad and garlic breadsticks.
Tuesday — Fast food due to not one but TWO evening appointments. Ugh.
Wednesday — Fixing a Tater Taco Casserole from the freezer before we get busy with church activities.
Thursday — Burgers (extras that I froze the last time I made Murphy’s Hot Hamburger), served with mixed veggies.
Friday — Creamy Chicken Crescent Rolls served with broccoli.
Saturday — Sophia and I are scrapbooking most of the day, so dinner will be quick, easy and simple: Meaty Black Bean Chili, served with chips.
Sunday — leftovers or snacking.
