Menu Plan Monday: October 11-17, 2010

Comments on last week’s menu: The Pork Roast with Mashed Potatoes and Gravy turned out exceptionally well and was a big hit.  The only thing I did differently was to not cut the pork in half, because I cooked it all day instead of a half-day.

Monday — Girl Scout meeting tonight.  I’m fixing popcorn chicken with macaroni & cheese for the girls.

Tuesday —  Corny Salmon Cakes with oven fries and peas.

Wednesday —  Stromboli with Caesar salad.  For dessert, I’ll finally be making the Chocolate Raspberry Cookie Trifle for our cell group.  Can’t wait to try it!

Thursday Meaty Black Bean Chili, served with my favorite cornbread.

Friday — Having dinner with friends this evening.

Saturday — not sure what will be happening on Saturday… so I’m just going to wing it.

Sunday — leftovers or snacking.

I tried the meaty black bean recipe last night and it was great, but of course desperation is mother of invention: turned out I DIDN’T have 3 cans of black beans OR chix stock. i used 1 black, 1 navy (white) and 1 cannelli (also white but larger) beans with beaf stock along with my ground beef. Boy it was pretty AND tasty. FYI…. THANKS for sharing.


    • I usually omit the chicken broth altogether because it turns out too soupy when I use it. Glad you liked it!
