Menu Plan Monday: October 4-10, 2010

Comments on last week’s menu: I changed the way I did the Murphy’s Hot Hamburger this time.  First, I used fattier meat so I would have a better base for the gravy.  That was a good move.  Second, I used low sodium beef broth because last time it seemed very salty to me.  That was not a good move, as it turned out bland.  Third, I used Ore Ida oven fries instead of making my own from scratch and that was a good move.  Cut down considerably on prep time and also made better fries.  I did not make the Chocolate Raspberry Cookie Trifle this week but plan to do so in another week or so, for our next cell group meeting.  I also did not make the Chicken Fajita Tacos, so I will carry them over to this week.

Speaking of this week…

Monday — Spaghetti, Caesar salad, garlic bread

Tuesday — Carried over from last week, I’m making Chicken Fajita Tacos and serving them with a southwest salad.

Wednesday — quick & easy pizza before heading to our church’s pumpkin patch party.

Thursday Pork Roast with Mashed Potatoes and Gravy, served with mixed veggies.

Friday — I’m going out with some friends.  Dan and the kids will have a casserole.

Saturday Old Fashioned Chicken & Dumplings.  Yummy!

Sunday — leftovers or snacking
