Menu Plan Monday: September 6-12, 2010

Comments on last week’s menu: This time I made the Italian Baked Chicken with Pastina with actual Pastina pasta (the first time I tried it I used mini farfalle).  The verdict:  we all liked the mini farfalle better.  I still don’t think there is enough meat in this recipe… so while it’s a keeper, I’ll probably continue to tweak it a little.

Monday — Worked most of the day at my dad’s house and by dinner time, barely finished.  We ate out for dinner.

Tuesday — carried over from Saturday (when I slept too late to get the crock pot set up), we will have Priest Chicken, served with broccoli and rice.

Wednesday — Dinner out with friends, then off to a church business meeting.

Thursday — crab cakes, french fries, mixed veggies.

Friday — I’ll be at a crop this evening.  I’ll fix a freezer casserole for Dan & the kids.

Saturday — I’m not sure what the day will hold, so I’ll plan on something simple… Chicken Nacho Bake served with salsa rice and black beans.

Sunday — leftovers or snacking.
