Menu Plan Monday: May 31 – June 6, 2010

Comments on last week’s menu: The Sensational Chicken Lasagna with Artichoke-Spinach Dip Top Layer was delicious.  Very rich, though, so unless you have a small army to feed, I’d recommend halving it.  I ended up not making the Dulce de Leche brownies for two reasons — lack of time and inability to find the key ingredient.  Wal Mart used to carry it but for some reason they’ve stopped, which makes me very sad.  😦    Dan and I reaffirmed our love for the Meaty black bean chili which was FAB-U-LOUS.  I omitted the chicken broth this time and liked it much better — when I fixed it before it was far to soupy for my taste.

Now, on to this week, which will hopefully be far less eventful than the last…

Monday I know we’re supposed to be having burgers since its Memorial Day and all, but we opted to go to the movies (Prince of Persia for the boys, Shrek Forever After for the girls) and then eat at Panera afterward.

Tuesday Easy Flavorful Pot Roast in the crock pot.  Serving with mashed potatoes and mixed veggies.

Wednesday — A quick dinner before cell group.  Chicken sandwiches, baked beans, and mac & cheese.

Thursday — Taking the Princess out for her birthday dinner.

Friday — Family movie night.  I was going to do homemade pizza but decided to go with Stromboli instead.

Saturday — I will be on a camping trip (NOT my idea) with my Girl Scouts.  Ugh.  I am certain that dinner will be mediocre and burnt.

Sunday — leftovers or snacking.
