Menu Plan Monday: May 24-30, 2010

Comments on last week’s menu: The Crunchy Nacho Cheese Chicken Casserole was very good.  I didn’t use enough chicken, so I had too much liquid.  (Not a fault of the recipe… I should have included more chicken in it.)  Other than that, it was very yummy!  On to this week…

Monday — Girl Scouts tonight.  I’m taking chicken nuggets and mac & cheese for the girls.

Tuesday — carried over from last week, I am making Sensational Chicken Lasagna with Artichoke-Spinach Dip Top Layer.  Caesar salad and garlic bread to go with it.   For dessert, we will have Dulce de Leche brownies — and I’m making extras for our cell group meeting the following night.

Wednesday — quick meal before heading to cell group.  Since I will be accompanying the second graders on a day-long field trip, I am going out on a limb and assuming that I will be dead tired when we return.  Dinner out!

Thursday — Another day on the road for me.  I’ll set up the crock pot with Sour Cream and Bacon Chicken, and will serve it with rice and broccoli.

Friday — Sophia’s birthday party is tonight.  I’ll be picking up pizzas.

Saturday — No idea what the day will bring.  I’ll keep it casual with Meaty black bean chili.  Serving with tortilla chips and assorted toppings.

Sunday — leftovers or snacking.
