Menu Plan Monday: May 17-23, 2010May 17, 2010
Comments on last week’s menu: The Maryland Fried Chicken with Creamy Gravy was good. Not great — and not what I had hoped it would be — but it was good. The chicken was moist and flavorful. My other new recipe is being carried over to this week.
Another note about this week: my freezer is in desperate need of being cleaned out. As a result, I’m going to try and do as little shopping as possible. Yay!
Monday — carried over from last week, I will make the Crunchy Nacho Cheese Chicken Casserole, served with a southwest style salad.
Tuesday — Two weeks ago I started to make the Turkey Manicotti with Caesar salad, and halfway through the prep realized that dinner wouldn’t be ready until very late if I continued. I stuck the cooked meat & bulgur in a freezer bag and we went out. This week I will allow myself plenty of time to finish it so we can eat on time!
Wednesday — Chicken Florentine Pasta Bake that I froze the last time I made it.
Thursday — evening appt, so we will eat out.
Friday — movie night = light fare.
Saturday — Sensational Chicken Lasagna with Artichoke-Spinach Dip Top Layer. Caesar salad and garlic bread to go with it.
Sunday — leftovers or snacking.
