Menu Plan Monday: May 3-9, 2010May 1, 2010
Comments on last week’s menu: The Bacon Cheeseburger Soup was unreal — it tasted EXACTLY like a cheeseburger! Very good, and at least a little healthier than a real burger would have been.
Monday — Corny Salmon Cakes with oven fries and mixed vegetables.
Tuesday — Setting up the crock pot with priest chicken. Serving with broccoli and rice.
Wednesday — We’re having a Cinco de Mayo Fiesta this evening! I enjoy this so much, I think this will be an annual tradition. I’m making tacos and Margarita Cake.
Thursday — Turkey Manicotti with Caesar salad.
Friday — I’m providing dinner for a family in our church, then heading to a scrapbook crop. I’ll fix Tater Taco Casserole with a southwestern salad.
Saturday — Going casual tonight. Chicken Caesar Wraps (new recipe), served with fresh fruit. Click here to see the recipe (pages 88-89).
Sunday — taking my mom, Dan’s mom, and their significant others out to dinner for Mother’s Day.
