Menu Plan Monday: March 29 – April 4, 2010

Comments on last week’s menu: The Meaty Black Bean Chili was quite delicious!  My only complaint was that it turned out very soupy… so much so that I ended up letting it simmer on high heat for much longer than the recommended 10 minutes.   The next time I fix this dish, I will reduce the amount of chicken broth or perhaps eliminate it altogether.

On to this week:

Monday Bacon Cheeseburger Meatloaf, served with baked potatoes and mixed veggies.

Tuesday — Fast food before heading to an evening appt.

Wednesday — We will have the Dorito Chicken that I froze the last time I made it.  Serving it with a southwestern salad.

Thursday —  I’m going to attempt to make Stromboli for the first time.  I get nervous whenever I have to use a rolling pin, so I’m really stepping outside my comfort zone on this one!  Serving with Caesar salad.

Friday — Setting up the crockpot with BBQ Pork for Sandwiches.  Serving with mac & cheese and baked beans.

Saturday 40 Garlic Clove Chicken with Homemade Spaetzle and broccoli.

Sunday — Happy Easter!  We don’t usually do a big Easter meal, so for now I’m going to plan on our usual Sunday leftovers or snacking.

  1. Hey, a little soup suggestion too…when too runny sometime I’ll put half of it into the blender to puree then add back into soup. That will thicken it without adding other ingredients.
