Menu Plan Monday: March 15-21, 2010

Comments on last week’s menu: Quite a few new recipes last week!  The Chicken Cordon Bleu Pasta was awesome!  So creamy, so cheesy, and the hint of Dijon on the chicken just made it perfect.  I give it four stars.  If you decide to give it a try, please note that the recipe makes 2 servings.  You will need to double it if you are serving more people.  I liked the Brie & Cherry Pastry Cups (as did everyone else at the party) but for me it was too much pastry and not enough brie.  Making this has inspired me to try and copy my favorite restaurant’s baked brie appetizer.  🙂   The Orange-Chocolate Chunk Cookies were also quite good.  My only complaint was that the orange slice pieces were too big.  I’d recommend slicing them into fourths rather than in thirds as the recipe called for.  Finally, the Salsa Chicken & Rice casserole was quite tasty and SO easy — just dump everything in a dish and stick it in the oven.  Sophia thought it was a little too spicy and both kids complained about the tomato pieces, but Dan and I liked it.

Monday — I’m fixing Tuna Noodle Casserole, a recipe that my friend Suzanne sent me.  Thanks Suz!

Tuesday Easy Chicken & Cheese Enchiladas.  Serving with rice and a southwest style salad.

Wednesday — spaghetti, Caesar salad, garlic bread.

Thursday — Setting up the crock pot with Priest Chicken.  Serving it with rice and broccoli.

Friday — Family movie night!  We will make our own pizzas and watch Cloudy with a Chance of Meatballs.

Saturday Meaty black bean chili.  Serving with tortilla chips.

Sunday — leftovers or snacking.
