Menu Plan Monday: December 28, 2009 – January 3, 2010

Comments on last week’s menu: Although I’ve fixed it once before, let me just say again that the Chicken Florentine Pasta Bake is wonderfully delicious.  A trifle on the expensive side, but the recipe could easily be halved (or make in two pans and freeze one for a later  meal).  I wanted to like the Creamy Dreamy Enchiladas, I really did.  But the taco seasoning/salsa flavor and the pot roast flavor just don’t mix well, IMO.  I will probably adapt this recipe for chicken at some point in the future.

Here’s what’s cooking this week:

Monday — Spaghetti.  Mainly because Sophia has asked for it EVERY. SINGLE. NIGHT! the last week or so.  I will serve it with Caesar salad and garlic bread.

Tuesday — We will finish off the leftover pot roast from last week, served with baked potatoes and mixed veggies.

Wednesday — A quick & easy dinner before we head out to cell group.  Chicken sandwiches, mac & cheese, baked beans.

Thursday — New Recipe:  Bacon-Cheese Topped Chicken.  (It’s gotta be good if it has bacon AND cheese on top of it, right?!?!)  I’ll serve it with mashed potatoes and broccoli.

Friday — It’s my tenth anniversary.  We will be going out to dinner.  Yay!

Saturday Old Fashioned Chicken & Dumplings.  Yummy, yummy comfort food.

Sunday — leftovers or snacking.
