Menu Plan Monday: August 24-30, 2009

Comments on last week’s menu: Noodle‘s Dorito Chicken was SO yummy!  However, Noodle doesn’t use measurements, so her instructions were a little vague.  Here’s my approximated version of the recipe:

  1. Cook chicken and shred the meat.  Set aside.  You should have 3-4 cups of meat.
  2. Melt a 16 oz block of  Velveeta and stir in either a can of Ro-Tel or a cup of salsa.  Add a can of Cream of Chicken soup and mix well until it is smooth and creamy.
  3. In the  bottom of a casserole dish, place a layer of crumbled Dorito chips, nacho cheese flavor.  I used an 8×8 dish, but I suppose you could use a 9×13 just as well.
  4. Over the chips, place a layer of the chicken meat.
  5. Cover the meat layer with the cheese mixture.
  6. Repeat steps 3-5 above.
  7. Bake at 350 degrees for about 20 minutes.

Easy-peasy and so delicious!

Now, as for this week, here’s what we’re cooking:

Monday — Ravioli with sweet Italian sausage.  Served with Caesar salad.

Tuesday — Chicken fajita tacos served with Black Beans, Corn & Yellow Rice

Wednesday — our church cell group will be meeting here this evening.  We’ll probably get a pizza or fast food for dinner, but I’m making a pretzel salad to share with the group.

Thursday Butter baked chicken & gravy, served with white rice and broccoli.

Friday — Movie night.  We didn’t watch  “The Apple Dumpling Gang” last week, so I’ve saved it for this Friday.  Dinner will be light fare.

Saturday — I am planning on having a yard sale Saturday.  Dinner will be simple… we will have Monterey Jack Turkey Burgers, macaroni & cheese, and baked beans.

Sunday — leftovers or snacking.

  1. I make the Dorito Casserole with ground beef and sometimes just layer a mexican cheese blend instead of the velveeta…serve it on a bed of lettuce with sour cream on top. Very yummy and the kids like it, too. I’ll have to try it with the chicken.
