Menu Plan Monday: August 10-16, 2009

Comments on last week’s menu: Last week I made a conscious effort to use the oven as little as possible.  In view of the fact that we are having a heat index that exceeds 105 degrees, I think it would behoove me to make that same effort this week.

The Chicken Bacon Ranch Wraps that I fixed last week were quite good, although not having the lettuce inside the wrap made it seem as if I had used too much ranch dressing.  next time I will either reduce the amount of ranch or make the recipe as it’s written and tell my kids to suffer through it.

A caveat for anyone who wants to try the Corny Salmon Cakes:  it is VERY IMPORTANT to get the boneless, skinless salmon.  I could not find this at the Wal Mart and so I grabbed some salmon that did not say “boneless” or “skinless” on the label.  I rationalized that if it had bones and skin in it, it would say so, right?  WRONG!  I opened those cans and was thoroughly disgusted.  Itty bitty vertebrae, hair-thin bones, and slimy skin.  Eeeeeuuuuw!  Honestly, I have seen cat food that looked more appetizing.  I ended up picking out all of the offensive parts (of which there were many) while ranting under my breath that such a product should not even be sold for human consumption.  Lesson learned.

Now, on to this week’s menu:

Monday — we are meeting some friends at a Mexican restaurant for dinner this evening.  Ole!

Tuesday — Caesar salad, spaghetti, and a variation of this basil pesto bread made in the toaster oven

Wednesday — cell group & VBS this evening.  We will eat an early dinner out somewhere.

Thursday priest chicken served with white rice and broccoli

Friday — Family movie night.  I don’t know yet what we will be watching, but dinner will be the usual light fare.

Saturday — we will be dining out.

Sunday — leftovers or snacking.



  1. LOL. I can’t believe you got stuck with the salmon WITH the skin and bones. I agree that the “yuck” factor is off the charts with said product!

  2. I’d never thought of basil pesto bread… and I have some basil pesto to use up in my fridge. I might just have to pick up some french bread today!
