Menu Plan Monday: May 11-17, 2009

Comments on last week’s menu: I tried a lot of new recipes this past week!  The Spaghetti Pizza Casserole was good, but not spectacularly different from any other baked spaghetti dishes I’ve tried in the past.  I loved the Tuscan Chicken Simmer but my darling son thought it was “too spicy.” (That’s the first time I’ve ever heard anyone describe pesto as spicy!)  Moving on…the Layered Dulce de Leche dessert was a BIG hit at the fiesta, and it looked so pretty when I sliced it up. It was very easy to make but looked like I’d spent a lot of time and effort on it. Sweet! My second attempt at the Best Tuna Casserole was good, but rather bland for my tastes. It just lacked some oomph.  My quest for a great tuna casserole recipe continues!  The Chicken Florentine Pasta Bake was fabulous! Even picky eater Trevor ate it. However, it was a bit pricey to make. The Gruyere cheese alone cost about $7.

As for what’s cooking this week…

Monday — Trevor’s chicken and rice, which I didn’t fix the last time I had planned to.  Serving it with broccoli.

Tuesday — Sophia and I have a girl scout meeting tonight, so I will be picking up dinner for the girls.

Wednesday —  Cell group this evening.  We will have a quick & easy supper of BBQ pork sandwiches, oven fries, and corn on the cob.

Thursday —  Easy Chicken with Potatoes (crock pot), served with mixed vegetables.

Friday — Family movie night — we will enjoy light fare and watch Felicity:  An American Girl Adventure.

Saturday Tater Taco Casserole.  This is a big dish, and I am taking half of it to a family from church who needs assistance with meals.

Sunday — leftovers or snacking.



  1. I made the chicken florentine pasta bake, and agree it was delicious! My belly loved it, my butt, not so much. It made quite a bit, enough for leftovers for lunch or dinner the next 2 days. I’m adding it to my once a quarter rotations…thanks for the link to the recipe!
