Menu Plan Monday: April 20-26, 2009April 20, 2009
Comments on last week’s menu: The Black Beans, Corn & Yellow Rice was awesome! So much so that I ate leftovers for lunch quiet a few days in a row. It was a very nice blend of different flavors and textures. The kids didn’t like it — they prefer foods to be neatly segregated rather than mixed up in a jumble — but Dan and I both loved it.
Here’s what’s cooking this week:
Monday — oven baked chicken, macaroni & cheese, broccoli.
Tuesday — The ladies from my church are having a girl’s night out dinner at a local restaurant. I won’t be eating at home, but I’ll have pork chops, mashed potatoes and mixed veggies ready for Dan & the kids.
Wednesday — A simple dinner before cell group — spaghetti, garlic bread, and Caesar salad.
Thursday — I’ll be making one of our favorites — chicken & dumplings.
Friday — I have a note on my calendar that says there is supposed to be some sort of family function at Sophia’s school tonight… but there have been no reminders or notices to date. If the event was canceled or postponed, we will do our usual movie night thing with homemade pizzas. If not, we will go to the school.
Saturday — Having a girl’s night out party here, potluck style. My contribution will be Spaghettini Carbonara Tartlets. I’m also going to fix
Sunday — leftovers or snacking
