Menu Plan Monday: April 6-12, 2009

Comments on last week’s menu: It was a crazy week — Tuesday and Friday got switched, then Friday and Saturday got switched.  However, I did stick to my menu plan, just not in the order I had anticipated!  I did not like the Mild Cheesy Chicken Enchiladas. Believe it or not, they were too cheesy and just lacked some oomph. Got a good chicken enchilada recipe? Please share it with me!  Ditto for the black beansPaula Deen’s Busy Day Chicken was pretty good. I didn’t care for the first bite all that much, but as I continued to eat it, I really liked it. Not sure why the recipe specified bone-in chicken… it would have been easier without having to pick the meat off the bones.

Monday — Lord help me, I’ve volunteered to chaperon a 9th grade trip to our nation’s capital.  I’m taking an iPod, a book, and a day’s worth of Excedrin.  I don’t know if I will be back in time for dinner or not, so I’m just going to keep it simple and set up the crock pot with Italian sausages and spaghetti sauce.  One of us will fix ravioli to go with them and also serve up a Caesar salad.

Tuesday Chicken Breasts with Herbs, served with rice and broccoli

Wednesday — Dinner needs to be sandwiched (pardon the pun) between a late afternoon appointment and church activities this evening.  We’ll probably hit a fast food place for dinner.

Thursday — We will be eating dinner at my mother’s house this evening.

Friday —  We will eat a quick dinner before going to the Good Friday service at our church.  We will have BBQ  pork sandwiches, oven fries, and baked beans.

Saturday —  Family movie night tonight since we didn’t do it on Friday.  We’re watching “Ruby Bridges” (at Sophia’s request) and having pizza.

Sunday — HAPPY EASTER!  We will either be eating out or just staying home and having leftovers.
