Menu Plan Monday: March 30 – April 5, 2009

Comments on last week’s menu: The “The World’s Best Shepherd’s Pie” was… just okay.  It had too much rosemary in it for my taste, and although the serving size was supposed to be 5, it should have been more like 8.  We had about half of it left over.  Had I known that, I would have halved the recipe rather than end up with an entire second meal of something I’m not crazy about.  The tuna casserole was pretty good, but it got overcooked.  I’ll try it again to see if the recipe is a keeper.

Here’s what’s cooking this week:

Monday To Die For Pot Roast, served with baked potatoes and broccoli.

Tuesday — I have a very late eye appointment this afternoon, so dinner will be Paula Deen’s Busy Day Chicken.  I haven’t fixed this before, but I already love this recipe for the simple reason that if I forget to set up the crock pot, I can still fix it.  Following the serving suggestions, I will have egg noodles and green beans with it.

Wednesday — Cell group night.  I ‘m going to fix some Monterey Jack Turkey Burgers and serve them with baked beans and macaroni &  cheese.

Thursday — I’m taking my dad to a medical appointment this afternoon and I’m not sure how late I will be getting back.  Dinner will be Mild Cheesy Chicken Enchiladas.  I’m going to follow one reviewer’s suggestion and add mild enchilada sauce so it isn’t too bland.  I’m also leaving out the olives, which none of us like.  Side dishes will be black beans and Spanish rice.

Friday — I’m taking my dad to a medical appointment again today.  We will do our usual Family Movie Night:  eating light fare while we watch Swiss Family Robinson (Netflix sent us the wrong disk last week).

Saturday –I’m scrapping today right up until dinner time  (whoo hoo!) so I will probably demand suggest that we go out to eat once I get home.

Sunday — leftovers or snacking.
