
Menu Plan Monday: February 23-March1, 2009
February 23, 2009I can hardly believe it, but for the second week in a row, I stuck to my menu every day, even when that meant that dinner was served quite late in the evening. I have to remember to check preparation time earlier in the day.
The chicken enchiladas I tried last week turned out well. I didn’t use the diced green chiles because I didn’t want it to be too spicy for the kids. Instead, I used half a packet of taco seasoning in the sauce mix. Sophia LOVED this dish and immediately claimed the leftovers for a future meal. If I make it again, I will probably use “real” chicken instead of the canned. Also, 12 ounces of meat isn’t much for a family of four.
Likewise, the black beans turned out well, despite the fact that I’d forgotten to get cilantro at the store. I used just a dash of cayenne pepper instead of 1/4 teaspoon in order to keep protests to a minimum.
Here’s what’s cooking this week:
Monday — Chicken spaghetti: half for tonight, half to go in the freezer for another time.
Tuesday — Girl Scouts tonight. I’ll be picking up pizzas for the girls.
Wednesday — A quick dinner before cell group. I’ll fix Monterey Jack Turkey Burgers, served with potato chips and baked beans.
Thursday — To Die for Pot Roast, mashed potatoes, mixed veggies.
Friday — Family movie night. We’ll make individual pizzas and watch Madagascar 2.
Saturday — Mom’s Night Out! Dan and the kids are on their own.
Sunday — leftovers or snacking.
