Menu Plan Monday: February 2-8, 2009

Last week was supposed to be uneventful, but it certainly didn’t seem like it!  I ended up abandoning my planned menu on a few occasions, so some of those dishes are being moved up to this week.

Comments on the new recipes that I did try:  The Lady’s Cheesy Mac was (brace yourselves!) a bit of a disappointment to me.  It just wasn’t cheesy/creamy enough for my tastes.  The Tater Taco Casserole was quite good, but a little too spicy for Sophia.  I should have used the mild taco seasoning.

Here’s what’s cooking this week:

Monday — Ham, pierogies,  mixed vegetables

Tuesday Crusted Chicken Romano, Caesar salad, pasta.

Wednesday — Dinner has to be prepared and eaten in between a late afternoon appointment and our family night at church.  I’m going to set up the crockpot — To Die For Pot Roast, served with potatoes and green beans.

Thursday Awesome baked pork chops, baked sweet potatoes, and broccoli.

Friday — I’m scrapbooking!  Dan and the kids will do our usual movie night routine… finger foods while they watch a movie.

Saturday — A busy day with more scrapbooking and picking up 70+ cases of Girl Scout cookies.  Thankfully, our cell group is having a potluck dinner/game night, so I don’t have to worry about cooking.

Sunday — leftovers or snacking.
