Menu Plan Monday: January 19-25, 2009

Comments on last week’s menu: The Cheesy Ravioli Casserole was better than I remembered it, and it was enough to feed a  troop of hungry Girl Scouts with plenty left over.  I really recommend it if you have a large group — super easy and tasty too.  Also, we LOVED the BBQ  pork sandwiches.  They were so easy to make and came out great.  I will admit, I was momentarily overwhelmed when faced with the choice of 37 different types of barbecue sauce at Wal Mart, but settled on “honey” because  most of the pulled pork sandwiches I’ve had have been on the sweet side.  It was great!

Here’s what’s cooking this week:

Monday Chicken fajita tacos served with Mexican rice and corn

Tuesday Meat loaf, potatoes, and mixed vegetables.

Wednesday — Trevor has a late afternoon dental appointment, and we have cell group that evening.  It’s a safe bet that we will have a fast food dinner in between the two activities.

Thursday — I think we might be having dinner with my mom.  If not, I will fix the chicken sandwiches, mac & cheese, and baked beans that I seem to be putting on my menu every week but never actually fixing.

Friday — Movie night!  We will have individual make-your-own pizzas and watch Disney’s Pinocchio.

Saturday Awesome baked pork chops, baked sweet potatoes, and broccoli.

Sunday — leftovers or snacking.
