Menu Plan Monday: October 13-19, 2008October 13, 2008
Comments on last week’s menu: The week went as planned. Everyone enjoyed the lasagna, which I don’t fix often enough because it is such a big dish that we usually end up with a week’s worth of leftovers.
Monday — Oven fried chicken, Roasted Red Potatoes with Bacon & Cheese, and broccoli.
Tuesday — I will be running around almost non-stop from 3:00 to 7:30 with various appointments and meetings. I’m going to take a wild guess and say that dinner will most likely take place at the Golden Arches.
Wednesday — ham, pierogies, mixed vegetables.
Thursday — Ravioli and Italian sausage, served with Caesar salad and garlic bread.
Friday — I’m working the Compassion International booth at a Mercy Me concert. I’ll grab a quick bite before leaving; Dan and the kids will have movie night with our traditional light fare.
Saturday — using leftover chicken from a few weeks ago that I froze after cooking, I’m going to make Cheesy Chicken Penne and serve it with peas.
Sunday — we’re on the road today. If we’re home in time for dinner, we will probably have leftovers.
