Menu Plan Monday: September 1-7, 2008

Comments on last week’s menu: The souped up rice was not as good as we had hoped it would be.  We were looking for a way to make the rice that Trevor really likes in his favorite chicken & rice dish, but this was not it.  This is the second time I’ve used Minute Rice in a recipe and haven’t liked it.  I wonder if it’s the rice.

Monday — already passed.  We were on our way home from an extended weekend trip.  We broke one of my cardinal rules of eating on the road and bought dinner at a convenience store/gas station.  It was horrible.  And expensive.  And horribly expensive, thus reinforcing my rule.

Tuesday — Sophia’s school is having back to school night tonight, so we are going to have spaghetti, Caesar salad, and garlic bread.  I know, we just had this last week but it’s one of Dan’s favorites and the kids usually eat it pretty quickly rather than sitting at the table for a long time complaining about their meal.

Wednesday — leftover 40 Garlic clove chicken that I will mix with a Parmesan cheese sauce, pasta and crumbled bacon.  Served with peas (I might just mix them in too, although it will bother the kids).

Thursday — We have a late afternoon appointment, so it will be a crock pot meal of pork chops, served with mashed potatoes and mixed vegetables.

Friday — family movie night!  We will watch the much-anticipated new release of The Little Mermaid:  Ariel’s Beginning and eat finger foods.  If I’m feeling particularly inspired, I will make it a seafood theme meal.

Saturday —  I’m going to a scrapbooking crop for most of the day, then to church for a ladies’ ice cream social.

Sunday — leftovers or snacking

  1. I *hate* Minute Rice. Next time try Basmati or Jasmine rice. The Basmati is my favorite, but make sure you rinse it first. The flavor is a little too earthy if you don’t.
