Menu Plan Monday: July 28-August 3, 2008

Comments on last week’s menu: I went spacey a couple of times last week — forgot to set up the crock pot, forgot to thaw the chicken I had in the freezer, thought I had Italian sausage at home when I did not, etc. Needless to say, most of what I had on the menu for last week was not prepared and will be re-planned for this week. I did fix the Ham & Cheese Potato Bake on Monday and everyone seemed to like it although I think I put too many hash browns in it. (It called for a 24 oz pkg and all I could find was a 32 oz. I tried to estimate what 3/4 of it would be, but I don’t think I did it right.) After Monday I didn’t stick to the menu plan at all. 😦 With any luck, this week will be much less chaotic.

Monday Cheddar Baked Chicken with mashed potatoes and broccoli

Tuesday — Ravioli and Italian sausage, served with Caesar salad.

Wednesday — Chicken sandwiches with macaroni & cheese and calico beans (the latter two leftover from Saturday’s cookout with friends)

Thursday — ham, pierogies, and mixed vegetables

Friday — (How did it get to be August already?!?!) Chicken Baseballs, served with broccoli

Saturday — It will probably be just Sophia and me this evening, as Dan and Trevor want to go to a concert. I’m not sure what we’ll do about dinner.

Sunday — leftovers or snacking.
