Menu Plan Monday: May 5 – 11, 2008

Comments on last week’s menu: Paula Deen’s Chicken Riggies were quite tasty, but the kids balked because, horror of horrors, it involved pasta without marinara sauce or cheese. Besides, it wasn’t until I started fixing it that I realized just how heavy it was on high fat ingredients. A whole stick of butter, two cups of heavy whipping cream, and a half pound of bacon. I think I gained three pounds just preparing it! The Pork Chop Barley Bake was not a hit. In fact, I don’t think any of us really liked it. It had too much orange flavor.

Monday aka Cinco de Mayo — Our obligatory Mexican-esque meal will be Chicken Fajita Tacos served with corn and Spanish rice.

Tuesday — I’ll be fixing the Pampered Chef Amazing 30 Minute chicken, serving it with rice and broccoli

Wednesday — I’m fixing Turkey Manicotti and serving it with a Caesar salad and garlic bread.

Thursday aka crock pot day — I’ll make the Herb Wine Chicken, served with rice and broccoli that I forgot to try two weeks ago.

Friday — Sophia’s school carnival is tonight, so we will either eat there or grab fast food before hand.

Saturday — Burgers, hopefully on the grill and hopefully with some friends joining us. I’m making Ranch Burgers as well as regular old plain burgers. Serving potato chips and baked beans with them.

Sunday — leftovers or snacking.

  2. Wow- I can’t believe they actually microwaved a chicken! 🙂 (I clicked on your Pampered Chef 30 min. Chicken recipe.) I don’t think my old microwave would hold up! It would be a great way to not have to heat up the house during a hot summer day, though. 🙂 I think I’ll stick with roasting our chicken in the oven.
