Menu Plan Monday

Comments on last week’s menu: Things got a little mixed up, what with not being able to get groceries until Wednesday. Tuesday night we ended up opting for McDonalds, Wednesday night’s crock pot meal fell by the wayside altogether. The Cheddar Baked Chicken was fabulous, and I highly recommend it. The Foil Pack Taco Chicken Dinner was okay, but I didn’t care for the potatoes, so I probably won’t make it again.

On to this week…

Monday — cheeseburger meat loaf, oven fries, and mixed vegetables

Tuesday Chicken Baseballs, served with broccoli

Wednesday — ham, pierogies, peas & carrots

Thursday — Crock Pot Day is Thursday this week, due to late afternoon appointments. I’m trying the recipe for Chicken Parmesan from my new crock pot cookbook. It calls for 2T dry red wine, which I don’t have on hand and don’t want to buy for such a small amount. Does anyone have a recommendation for something I could substitute?

Friday — Dinner with my mom; I don’t have to cook!

Saturday — I have half of our chicken spaghetti in the freezer from the last time I made it. I’ll thaw it and cook it for dinner this night.

Sunday — We have tickets to a chicken & dumplings fundraiser dinner.

    Your menu sounds great. You could probably substitute chicken broth or beef broth for the red wine. I usually use chicken in place of white wine and beef in place of red….but, with the chicken you may want to use the chicken broth.

  2. A few other suggested substitions for the red wine: Non-alcoholic wine, beef or chicken broth or stock, diluted red wine vinegar, red grape juice diluted with red wine vinegar or rice vinegar, tomato juice, liquid from canned mushrooms, plain water.
