Menu Plan Monday

Comments on last week’s menu: The Italian Chicken & Potatoes crock pot dish was a big hit and so easy; it’s definitely a keeper. The meat loaf was unbelievably bland, so I won’t be making that one again. The old fashioned chicken and dumplings were totally delicious and just as yummy as I remember my grandmother’s being. I need to work on my rolling pin technique, but I’ll be getting lots of practice in the future, I’m sure.

Here’s what’s cooking at my house this week:

Monday Monterrey Jack turkey burgers, mac & cheese, baked beans.

Tuesday Crazy day! Trevor is getting out of school later than usual (4:00), we have an appointment at 5:00, and then Sophia and I have a Girl Scout meeting at 6:30. We’ll grab fast food and eat in the car going from the appointment to Girl Scouts. Blech.

Wednesday aka Crock Pot Day — my friend Suzanne sent me a great crock pot cookbook (Put a Lid On It: Slow Cooker Recipes, Menus, and Shopping Lists by Kitchen Koaches). I’ll be trying the chicken rolls, which are similar to the ones found in this recipe.

Thursday — When I made Paula Deen’s Italian Chicken Casserole last month, I had enough to feed us twice, so I put half of it in the freezer. I’m thawing it out and serving it this week with garlic bread and Caesar salad.

Friday — My mom is joining us for dinner. We’ll have Herb Crusted Pork Loin with mashed potatoes and mixed vegetables

Saturday — oven fried chicken, rice, and broccoli

Sunday — leftovers or snacking
