Menu Plan Monday

Comments on last week’s menu: The Doritos Casserole was quite tasty — I love Mexican-esque food, but alas, half of my household doesn’t really care for it. Dan thought it was “okay” and Sophia refused to eat it. The crockpot pot roast was very good, although the directions were not very well written. I may make it again. Chicken & Macaroni Bake was very good — imagine a cross between chicken spaghetti and old fashioned macaroni & cheese. However, the kids didn’t like it, so I probably won’t make it again.

Monday — At Dan’s request, I am fixing tuna casserole. There are a gazillion different recipes for tuna casserole, none of which reside in my recipe box. I’m going to try this one and if it isn’t good, I’ll try another one at some point in the future.

Tuesday — I have a girl scout meeting at 6:30; Sophia and I will have to dine & dash. I’m going to keep it simple and have chicken sandwiches, macaroni & cheese, and baked beans.

Wednesday — a school meeting in the morning and eBay work the rest of the day — I’m setting up the crock pot with Italian sausage, which I will serve with ravioli and a Caesar salad.

Thursday — herb crusted pork roast with pierogies and mixed vegetables

Friday — We weren’t able to have dinner with my mom last week, so we will be doing it this week instead.

Saturday — I’ll be using a Hawaiian marinade on chicken, and serving it with Hawaiian sweet potatoes and green beans

Sunday — leftovers or snacking.

  1. Reality check: Did Sophia not want to touch the Dorito Casserole (sounds yummy) because she was sick or because it didn’t have enough catsup? 🙂
