Menu Plan Monday

Comments on last week’s menu: I didn’t like the Pineapple Rum chicken very much. It was okay, but only just okay. As for this week, we have a lot of stuff going on, plus I’m getting over a sinus infection (very slowly!), so I’m not going to be overly ambitious.

Monday — PTA meeting at 6:30, so we will keep it simple & have spaghetti, green beans, and garlic bread.

Tuesday — We have a late afternoon appointment and probably won’t get home until after 5:00. I’m going for quick & easy chicken patty sandwiches, mac & cheese, and baked beans.

Wednesday Slow Cooker Chicken Stroganoff with noodles and broccoli

Thursday — There is going to be a soup dinner fundraiser at our church for a family that will be adopting two Ethiopian orphans. We’re attending, and I’ll be making a crock pot of Paula Deen’s Tastes Like Lasagna Soup as a contribution.

Friday — I am driving to the big city today, but should be back in time for dinner with my mom. I’m going to fix 40 garlic clove chicken with rice and broccoli

Saturday — casual dinner, make your own pizzas (which I’ve planned for the last two weeks and still haven’t done) or leftover buffet.

Sunday — leftovers or snacking after church.

  3. It gets hard to juggle healthy meals with all the after school activities. This is one of the reasons I love menu planning so much!
