
Menu Plan Monday: September 8-14, 2008
September 8, 2008Comments on last week’s menu: I have to tell you, the leftover dish I made on Wednesday night last week was SO delicious! I made a sauce of parmesan cheese and heavy cream, then added bacon and the leftover 40 Garlic Clove Chicken. Mixed it with some bow tie pasta and it was wonderful. Sort of like Pasta Carbonara, which was one of my favorite things to make before Trevor came along. The week went as planned except for Friday, when we were invite to a spur-of-the-moment cookout at a friend’s house.
On to this week — it’s another busy one:
Monday – I’m driving my dad to Baltimore for a medical appointment and probably won’t be back until late. I’ll set up the crock pot for Dan and the kids. They’ll have To Die For Pot Roast with redskin potatoes and green beans.
Tuesday – I have a meeting at 6:30 tonight, so it will be dine & dash for me. I’m sticking with something simple — chicken sandwiches, mac & cheese, and baked beans
Wednesday – I have a working dinner meeting at 5:30 this evening. I’m pulling the second half of the Chicken Spaghetti that I made a few weeks ago out of the freezer and sticking it in the oven for Dan and the kids before I leave.
Thursday – My mom’s birthday, so we are taking her out for dinner.
Friday – crab cakes (at Sophia’s request) with rice pilaf and broccoli
Saturday – I’ll fix that healthy Manicotti that the kids both love, served with Caesar salad and garlic bread.
Sunday — leftovers or snacking
